News reports are full of accounts of obesity and its general effect on public health in USA. Increase in Type II diabetes and poor cardiovascular health are the most obvious consequences. Many of the problems can be attributed to high meaty diet along with high sugar consumption. Among the public, cholesterol levels are high and corresponding body mass index (BMI) is also high. The high cholesterol levels are generally attributed to meaty diet and lack of exercise. To a great extent, this can be alleviated by a vegetarian diet lacking cholesterol. Thus it is possible to improve heart health and reduce obesity by adopting partial or total vegetarian diet. However for those to take this path, for better health, guidance is lacking and misunderstanding of vegetarian foods is rampant that may lead to disappointments and frustration. This book, " Healthy Vegetarian Recipes" offers a simple solution without drastic change in life style. Recipes given do not contain animal fat or products other than desserts containing reduced cholesterol butter oil. The minimum amount of vegetable oil used is cholesterol free. This alternate choice offered should help to reduce body cholesterol levels and obesity and improve cardiovascular health. Moreover, one should seriously ask the question whether animal based diet is sustainable and at what cost?

Healthy vegetarian recipes of the long past are brought back to life making this book and excellent source for preparing foods of coastal Karnataka and Kerala in India. Many vegetables and recipes described in this book are in danger of becoming extinct but may see a new beginning as a result of this work. How many people from that part of India remember such names as Kalasu and Kayi Rasa these days? My guess is not many. My wifeand I have tried several recipes from the book that brought back the tastes and memories of my childhood.
Dr. Bhat has organized the book in a logical manner making it easy to find items for breakfast or for a sweet tooth. Instead of a dry list of ingredients and steps, he describes the preparations in a fluid narrative with comments on the choice of optimal vegetables and nuances in achieving the best results. We found it helpful to scan the entire section first before reading the chosen recipe more carefully prior to cooking. That way it was easy to visualize how the recipe was suppose to work and make adjustments to suit our kitchen and the stock of available spices.
This book would have deserved a five star rating had it not been for a few changes needed to improve it further. There are a few typos here and there, for example one on page 11. Also approximate cook times are lacking in some instances, e.g., page 17. An alphabetical index at the end would be immensely helpful for quick reference. I hope to see a new edition come out soon with these and other enhancements.

This is an excellent cookbook. An introduction gives the reader insight into the author's thinking about the importance of a vegetarian diet. Easy to read and understand and follow directions. Delicious recipes that can be used for any occasion. The photographs of prepared items are enticing. This book is simple and straightforward with all the important and specific details of every recipe provided. Also what is unique about this book is the description and categorization of vegetables so that they can be used in the right recipes.
The book is an excellent rendition on need for vegetarianism based on health and spiritual considerations. A number of recipes, tasty as well as healthy, are described in detail with eye-catching pictures. For anyone seriously interested in vegetarian diet this book will serve as the one worthy to be kept in home library. A good addition to the list of many books on vegetarianism, and with a special insight and outlook. Worth your time and money. Highly recommended.
